
I recommend buying walnuts in their shells because "open" they oxidize very quickly, acquiring a slightly rancid taste
Ingredients for 4 people:
two heads of red radicchio from Verona or Treviso
1 organic Kaiser pear
150 gr of “old” Monte Veronese type cheese, Grana Padano or Piave cheese
5 walnuts
Extra virgin olive oil
Balsamic vinegar
salt
Clean, wash and cut the salad into strips of a couple of centimetres. Drain it and dry it well. Slice a pear with its peel, the cheese into chunks, shell the walnuts and put everything in a bowl where you have emulsified extra virgin olive oil, balsamic vinegar and a pinch of salt.
