
Lemon chicken can be made with any part: thighs, upper thighs, breast but also the whole chicken divided into pieces
half chicken (in pieces) or 4 upper thighs/thighs.
1 leek.
1 lemon (organic)
parsley
warm water
salt
pepper
Put the chicken pieces in a saucepan , add the leek cut into thin slices, the juice of a lemon, a pinch of salt and a pinch of water.Cover and cook until it absorbs all the liquid and the chicken takes on a nice golden color. Add a little more warm water to make a sauce by mixing with the caramelized proteins of the chicken on the bottom of the saucepan.. Chop the lemon zest - with the potato peeler (only the yellow part) from the lemon before pressing - together with two or three sprigs of parsley.
Serve with chopped parsley and lemon only when the chicken is already in the serving dish.
Why choosing organic lemons? Because fertilizers or pesticides are deposited on the skin, but lack on the biological ones: a cure for health, but the taste also benefits.
This chicken is also good with plain boiled basmati rice.
