
Ingredients for 4 people
1 / 1.2 kg of broccoli
½ white onion
6 tablespoons of extra virgin olive oil
water
Milk (I used oat milk)
bacon
2 cloves of garlic
1 piece of chilli
A few sprigs of thyme
Pink pepper in berries
Salt to taste
Clean the broccoli by removing the leaves and the "core" (the size of the broccoli depends on the quantity to be used: if they are small you will have less waste), wash them and put them in a saucepan together with the chopped onion and 3 tablespoons of oil. Cook for a few minutes over low heat and add two fingers of water. Cook until the broccoli flakes and blend them with the immersion blender. Add oat milk (lighter than cow's milk, but the latter is fine too) until the desired creaminess is reached; season with salt and put back on the heat to heat the cream. In a pan put the remaining oil with the peeled but whole garlic) and the piece of chilli pepper. Heat and add the diced smoked bacon. Sauté well, remove the garlic and at the last minute add a few sprigs of thyme to flavour. Divide the cream into plates, put a quarter of the bacon in the centre without the thyme and chilli pepper and season with the oil that has been produced. Garnish the dish with a few pink peppercorns and a sprig of thyme.
